Honduras - Edin Lopez (2026)

Beneficio San Vicente is among the most respected operations in specialty coffee. When Fidel Paz started buying and selling coffee in Santa Bárbara Department in the 1980s, Honduras did not have an excellent reputation for its coffee quality. Since the early 2000s, thanks to the extended Paz family and competitions like the Cup of Excellence, San Vicente has helped establish Honduras as a source of some of the world's very best coffees.

Most of the coffees milled at San Vicente originate from the highlands around the Santa Bárbara Mountain and Lake Yojoa. The area's misty conditions and cool temperatures prolong the maturation period for coffee fruits. Consequently, the harvest finishes much later here than in Marcala, where the rest of our sourcing in Honduras is concentrated.

Edin Geovany Lopez is one of many young producers who deliver coffee to San Vicente. Edin's farm, Finca Manantial (meaning "spring" or "source"), is located at 1,600 meters above sea level in the community of El Cedral and is planted with an excellent mix of varieties, including bourbon, pacas, SL-28, and gesha.

This lot - one of two we bought from Edin this harvest - consists of 100% pacas, a compact variety and a close relative to bourbon. Though susceptible to leaf rust and other pests, it has the potential for very good quality. We tend to like pacas-varietal lots when seeking a more traditional and familiar flavor profile.

This coffee was produced using a traditional washed process and dried on the farm. This is the second year we've sourced coffee from Edin and the first year we've offered his coffee as a single origin. We're looking forward to growing together as we learn more about his farm and processing techniques in the coming months.
