We were introduced to Roger's coffees in 2019 by our friends at Cafe Imports. Since then Roger has become a consistent presence on our single origin menu, supplying us with delicious washed and natural process coffees alike.
Las Flores is one of three farms that Roger inherited from his father, occupying about 2.5 hectares at 1,500 meters of elevation in Marcala, Honduras. His entire extended family is involved in coffee to various degrees - his mother, María Nery Márquez, and sister, Mirna Lizeth Domínguez Márquez, both performed well in the Honduras Cup of Excellence this year, and his brother, Abel Domínguez Márquez, recently opened a superb specialty cafe right in the heart of Marcala. Each is passionate about producing excellent coffee and, like most producers in the area, they are proud to represent Marcala as a celebrated coffee region.
Marcala is located in western Honduras in the Montecillos mountain range and within the department of La Paz. While not especially far from Santa Bárbara, where the rest of our sourcing in Honduras is concentrated, the climate in Marcala is significantly drier, with an earlier and more concentrated harvest period.
Roger primarily cultivates high quality traditional varieties like catuaí, bourbon, and caturra, in addition to small amounts of gesha and parainema. This lot from Las Flores is 100% catuaí, a compact cultivar originally developed in Brazil by crossing caturra and mundo novo. Its quality potential in Honduras is excellent - in 2019, this exact same plot netted Roger a second place finish in the Cup of Excellence with an impressive score of 92 points.
Roger employs ten seasonal pickers at Las Flores alongside two full time staff. They follow strict standards of picking and processing, beginning with the careful selection of ripe fruit and ending with sun-drying the coffee on raised mesh platforms. Roger has his own cupping lab to evaluate quality and takes the additional step of sending samples to IHCAFE, Honduras's national coffee growers's organization, for analysis.
Historically Honduras lacked adequate infrastructure for coffee production, and as a result it was not celebrated for is coffee quality in the same way that Guatemala and El Salvador have been for well over a century. Beginning in the early 2000s this changed rather dramatically, led by a wave of visionary producers who believed in the strong potential of Honduran coffees. Today, Honduras is the largest producer of coffee in Central America, and Marcala is undoubtedly the source of some of the world's best coffees year after year.
Roger's coffee is proof of the stellar quality that is now possible in Honduras, and we're delighted to be able to offer Las Flores yet again.
