Citron Espresso Tonic

An intensely refreshing combination of homemade Orange Blossom Syrup, tonic water, espresso, and a candied orange peel garnish.
Ingredients

300g white sugar

300g hot water
-
150g orange blossom water
-
1 slice candied orange peel
-
Double shot espresso (~36 grams)

15g Orange Blossom Syrup

150ml tonic water
-
Ice
-

Directions
Syrup Directions
Combine sugar and hot water, stirring until sugar is completely dissolved
Add orange blossom water and stir to combine
Let cool to room temperature
Transfer to sealed container and store under refrigeration until ready to use
Drink Directions
Add prepared syrup to an empty 12oz glass
Top with tonic water and stir gently to combine
Add ice until cup is nearly full
Slowly top with espresso (combining too quickly will cause the drink to foam and overflow)
