I have a chemex and v60, this coffee tastes excellent brewed this way. Also good in an Aeropress.
I also have a breville db and the smart pro grinder, I could not get this coffee taste as clean and excellent. I tried various grind settings and brew temperatures (90-95c) and ratios(2 to 3). The coffee was just a bit too sour, it's possible the roast was a drop too light in this batch(I have managed to get good espresso from this coffee before)
In the end, I ended up using James Hoffman's/Scott Rao’s trick of adding buffer to my coffee (essentially a bit of baking soda and water solution) this helped downplay the sour notes.
